Having lived in Germany, I love brats. Some many versions.
I smoke brats all the time. I also smoke Hot Dogs too, but I prefer to use the larger 1/4 or 1/2 dogs. But they're precooked/cured. Can't really find uncured HD unless I do them myself.
Observe that even Johnsonville is releasing some tasty completely cooked variants that differ from their traditional, fatty composition. We discovered a deliciously spicy Cajun model. The version chicken/hab is also ago. I believe they produce it, but I wouldn't put my life on it. The Warden enjoys it immensely. A lovely Yankee taught me how to prepare ordinary brats in the Joisey fashion. If anyone is interested and does not already know how to accomplish it, I will gladly explain the process.
