Well, Thanks to Fast Eddy, the Cookshack class, some great advice from SmokinOkie, and the FE100, I took the Idaho State Reserve Grand Champion! The G.C., Dave Shultz, PackerBacker BBQ (who also happens to be an F.E. owner, but used something else this time)deserves a big congratulations also.
Smokin, the ??????? worked like a charm as it got me a 1st in ribs and the ?????????? on the brisket garnered a 3rd.
The KCBS rep on stage had a nice comment on the Fast Eddie T-shirt I was wearing.
Thanks All,
Joe

Joe, congrats, glad I could help, makes me happy, BUT... no more help, you're giving away my secrets on the internet. If that tip alone got you a first in ribs, heck I need to keep that a secret or sell it.

I finally come up with one or two ideas and you shared them. Now everyone will be soaking their ribs overnight for 12 hours in Vinegar and added Chicken Seasoning to the brisket rubs Wink

Sorry Smokin'. Last night I was running on adrenaline fumes and severe lack of sleep. Hope you can see past my faux paus here as I'm a bit embarrassed Red Face . Thanks for taking care of me with the question marks...and I hope you caught it quick enough!!!
Thanks again,
Joe

P.S. I forgot to use the Chicken bullion in the vinegar.
