good question, I had never considered carb count in jerky seasoning. I mostly use Hi Mountain seasoning for jerky, here is their ingredient list http://himtnjerky.com/product/ingredients05.pdf

Most of their seasoning kits have some sort of sugar, dextrose, maltodextrin. Looks like their pepper/garlic might be low carb.

another possibility would be to mix your own spices. Use a sugar-free cure (I have some A.C. Legg cure that has salt, sodium nitrite and dye to make it pink in color). just a few thoughts -- good luck
I also would consider jerky low-carb. I cannot imagine leaving out brown sugar or using anything like Splenda. I reckon experimentation with ingredients is the thing to do. It is hard to balance heat, acid, salt, sugar without sugar. You can use fruit, but it is still sugar, right?
