Well Santa came early.

I've tried other methods of sharpening, even paying another guy to do them. Been looking at this for years.

After we destroyed the edge on my knives this week at the class (they were the only knives available and trimming 180 chicken thighs, 13 briskets, butts, etc etc) I need to put the edge back on them in a serious way. Wanted to get the one with the scissor attachment.

Good call, Smokin'. I've had the same unit for around 6 years, and I'm convinced that it's far and away the best knife sharpening system on the market.

Hint - There's a little learning curve involved, so take your time at the outset. Also, consider buying a few cheap knives to experiment with before you start working on your good ones. I found a few banged up knives at a local estate sale, and after working on them for training purposes, they turned out better than new.

Thanks guys.

Been wanting to buy this for years, but it was a chunk of change. My wife is thinking of doing Scissor Sharpening (it's expensive for Hair Dressers).

Now i have to go get more knives... LOL

The knife shop that sharpens mine has a bin of some, I think I can talk him into a few.
Yep we've had ours[Apex} a couple years,and they are truly the standard.

Some of us older folks with arthritis,banged up shoulders,etc have a little learning curve-as mentioned.[no names mentioned Wink]

Used up all the junk knives around the house/lawn to practice.

Should have bought the pro-for the "boss"s scissors,etc.

Had a bunch of old Chicago Cutlery knives from the grandparents,that had been used as yard tools for a half century and really fixed them up.

All my German knives are so hard that they are still work.

Still not good at putting multiple edges,reversing,etc.

There is a reason those old knfe pros are sought out.

If you have any real problems,call Ben,out in the NW .

He developed it and loves to talk about them.

If you really screw one up,he can fix it for you.
