Made my first butt today & was very impressed with the results. Started with a mustard & cookshack rib rub on a 3 1/2 pound butt. Loaded the smoker with a fair sized chunck of applewood & set the thermostat half way between 200 & 225. Put it on at 7:00 AM & let her cook all day while I was at work. At 4:00 o'clock I called my son & told him to bump the temp up to half way between 225 & 250. Cooked for a couple hours at that temp. & then removed & foiled till I had the rest of the side dishes ready. I then pulled it, sauced it, & had one of the best pulled pork sandwiches I've had.

Cookshack perfection strikes again!
