Hi. Can you help me figure this out please. There is a BBQ restaurant down in Milwaukee (the good land) where they list on their menu for dinners, OUTSIDE... $9.53. It is preceeded by Shoulder and followed by Beef. I thought they were talking about side pork at first, but then I decided that was not it. Do you think it is just the outside of the shoulder, as in the bark? Perhaps some of you from more southerly climes are familiar with this item? I wrote to the place and asked, but recieved no answer. Love to know! If you do know, how is it served?

Thanks,
Kate

Hi Jack!

Thanks, I understand. Seemed odd that the fatty bark area was going for more $$ than the interior meat. I read some reviews of the place and people were going ape over the outside, more so than the pulled pork or the brisket. I like the bark too, but I am not big on fat. This was the first menu that I saw outside listed!

Thanks for the help!

Kate
