Time to start clearing out the freezer. Brined a 3.5lb roast for a day, salt, pepper and garlic powder for a rub and covered with some bacon for a little extra fat.
Couple of chunks of apple and 2.5hrs at 275 and it was done. Cooked a little faster than I thought it would, I was thinking it would take 3.5 to 4hrs.
Had to FTC it for a couple hours before dinner, was just a touch on the dry side but quite tasty.
