I am doing some pre-planning, and just put a big pan of seasoned beef stew meat in the smoker. This will be used either for Chili Colorado or Beef Stroganoff for Valintine's Day. I have 3 small Briskets to cook this weekend. They don't have a fat cap on them, and I still don't know how I am going to do them. Bought 2 bottles of Zesty Italian salad dressing and marinade for a future Salmon smoke. I am hopeing to enter the Cookshack contest. Idaho should have at least one entry.
