I let a friend use my FEC 500 to cook some butts for his restaraunt anh also cooked a case for me, but not to my desire of doneness. I always cook mine to 190 degrees and I'm not shure where he got these to but their not quite done to my liking ,so my question is, Do I need to cook to 190 in recooking or will the be way over done by re-cooking to this temp?"
