Scottish Eggs are normally just sausage wrapped hard boiled eggs rolled in bread crumbs and deep fried and served with a honey mustard dipping sauce. Sometimes they put bacon crumbles & cheese on the sausage before putting the egg in.
I just took hard boiled eggs and some bulk pork breakfast sausage wrapped them and then dusted the outside with some rub and wrapped a piece of bacon around them.
Whole, I just flattened out the sausage into almost an oval shape about as thick as you want it (1/4 - 3/8) and then wrapped it around the dry egg. Didn't dry them at first and I think I would still be trying to wrap it had i not dried it off.
Those look great. I've never made a Scotch Egg. I guess it's about time. Did you use Maple Sausage for both? You had my attention when you said Maple Fatty. I just made 9 pounds of it. May have to copy cat your meal, with biscuits of course.
