Have done a number of good smokes since I got my 008 2 months ago.

Today put in $100 rib roast and the thermostat seem to be out. Maverick went to 300* when set to 225. Thought it was the probe so pulled food probe and it was the same. Turned the dial up and down and it "clicks" at 150* when 275 inside. Unplugged and the temp is now fiannally going down. Not a wood fire as not using wood.

GRRR. Should I move to the grillto salvage?

Was doing Stuart method #2 where I seared at 600* first.

Just checked and temps are 225* smoker and 70* PR. Maybe I will baby sit it and plug and unplug for the next 4 hours??

Any Ideas?

Thanx, Jim

PS--Everthing else I have done has been great except for my own mistakes (too much wood)

I have now set my Maverick Hi/LO alarm to 240/205(shooting for 225* for this first phase)and will plug/unplug as alarms go off.

It is still Park or Flat out and I am tending to it about every 15 mins but this is still a lot easier than adding wood to the old brinkman about every 1/2 hour.

If I did not have the maverick probes would have had to move to the oven or BBQ. This way I should have it turn out just like Stuarts albeit with a little more effort as I do not have to open the door and my temp swings are no more than the 008 has in perfect order.

Will have to call CS tomorrow to get a new thermo.....got to go low temp alarm....
let you know how it turns out

I have a feeling it is working correctly. Call just in case.

Cool

After your post Wife says the outlet may be bad..... so I plug in lamp and when I turn on switch lite goes on and when I turn off switch lite goes off.....tells me outlet is OK?

Now I plug in empty 008 with both probes on grills and set at 150*....now at 265* on one probe and 272* on other and still going up as i write this....it clicks ONLY at 150* (as it has today and never has in the last 2 months) and this is the only place it clicks unless the temp is set below 150* and then the unit shuts off. Any setting above 150* has the burner constantly on and any setting below shuts it off...just like the lite bulb. If this is "perfect" the unit was not working right the first 2 months when you just set the temp and had plus or minus 20 or 30 * on the maverick while you swilled brews.

Am I missing something? I will call tomorrow . I like the 008 a lot and if it is only the burner or thermo no bigee.

Temp now 297* and climbing with gage set at 150*.

Jim
