Go lighter on the cheese, I like Pecan first (I always like Pecan first) hickory is common and oak are what a lot of smokehouses use.

Ah, but I need to find Grad students, not undergrads, if someone is pretty "up" on a particular subject, they can always email me...I can never have too much help

RE: Jerky link do a search in the recipie section. One of the posts has a link to Q-Doggs Jerky page. Very easy, very good. Add a little black pepper. Make sure you use the Tender Quick to cure properly and marinade a full 24 hours (I like 48).

I agree. No better smoker for jerky than a Cookshack Smokette. I use Hi Mountain.
