Last time I had wild goose I almost broke a tooth on a pellet. My buddy shot it. He was an avid hunter and fisherman I knew when we lived outside Buffalo, NY. He shot the goose out by the Niagra River (where he and I hunted once, but didn't catch any) and treated the goose to get rid of the wild game taste. Cooked indirect on his grill. Quite tasty.
Once I took my wife to a wild life sanctuary an hour east of the city to see the Canadian geese during migration. We got to the lake just before dusk and absolutely no geese, not one. So I said to my wife, "We better go. Look west, there are some storm clouds coming."
Well, they ain't no storm clouds. They were wave after wave of geese coming in from feeding in the fields. There were so many that they darkened the western sky. Incredible. Eash wave with similar landing patterns. Couldn't tell you how many landed cause there were too many. But saw tens and tens of thousands. No hunting in the sanctuary, but the surrounding areas had to supply hunters with goose heaven. I'll never forget that evening.
While doing some research on the origins of pastrami I read away on Wikipedia where they state that originally it was goose breast that was used in Europe to make "pastrama", when immigrants came over to America they started using beef because here it was so readily available (and goose not so).
