Still learning but this turned out good enough to share This is an adaptation of Alton Brown's Gyro meat recipe. His Tzatziki sauce is really good too. Google "Alton Brown Gyro" if interested.
1 medium onion, finely chopped
2 pounds ground lamb
1 tablespoon minced garlic
1 tablespoon dried marjoram
1 tablespoon dried ground rosemary
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Mix all ingredients by hand in a large bowl.
Form a normal loaf and place in an aluminum bake pan. Dont use the pan as a form. Use a shallow one larger than the loaf.
I hickory smoked 2 hrs @ 225 deg and finished in the oven at 325.
Pull at 160-165 and let rest before slicing.
Enjoy as a meatloaf or Gyro style sandwiches with Tzatziki sauce.
