Hi Everyone..I just read the recipe section looking for a brine..Could I use the same Smokin'Okies smokin turkey 101 brine for duck?? If not does anyone have a recipe for me.The duck is domestic and will be coming from my local supermarket. I was thinking of using Okies method to keep it a nice brown colour by wrapping it in cheese cloth soaked in butter.This really worked well on my turkey.What is the internal temp I should look for? I smoke duck quite often. I've never bothered to brine duck because it's so fat, it won't dry out. However, I have injected in the past with a concoction of Cajun Injector Creole Butter with orange juice and Grand Marnier. It was good that way, but it's just as good without the injection too. I've found that it's easier to cook duck halves or quarters. It gives the fat an easy way out and the duck cooks more evenly. Also, take a sharp implement and stab little holes all over the skin before you season it. Again, to help get rid of fat. Duck fat is very good for cooking after it's left the duck. I cook my duck on a rack in a pan, so I can save that fat for stir-frys and other uses. Plus, cooking on a pan makes clean up a breeze. Clean, rendered duck fat lasts a long time sealed up in the frig.

Taking the duck to the table, since I've cooked in halves or quarters, I take the meat off the carcass (except for legs). Put the duck meat in an oven safe pan, arranging the "pulled" on the bottom, sliced breast and legs on the top. Mix up some orange juice, orange marmalade and Grand Marnier and pour some over the plated duck. Keep in a warm oven until ready to serve. Make sure you have some extra sauce on hand for the duck eaters.

Oh, and use orange pellets for the smoke...
