Hi Smokin'!!!
I want to make your vinegar mop for pulled pork, but I am unable to get any crushed red pepper here. First of all, is this referring to red peppercorns or crushed dried red chili peppers? If you are referring to crushed red peppercorns, I am unable to obtain these here in Australia and I am wondering if you could suggest something I could use as a substitute for the crushed red pepper.

I have fond memories of Christmas / New Years on the beachs of Australia (and a nasty body surfing accident) instead of the cold we have.

You could substitute any ingredient you use for hot sauce. The idea is to add just a little heat, you can use what you want.

The pepper flakes tend to stick better than adding a hot sauce, that's why I like them.

IF you use a hot sauce, don't overpower the flavors of the other ingredients. The idea is a blend of flavors, not just overpowering heat.

Basically if you take red peppers that have been dried and then flaked, that's what you get.
Surely there is a Pizza Hut or other international chain around.

That is what sets out on their tables and they would probably give you a big bottle.

Like Smokin' says,"balance"

The ground cayennes I order go from 30,000 to 120,000 Scoville units and they can startle you[if you don't pay attention] when making sauce and sausage.

Thanks for all the replies, guys. Now that I know to use crushed red peppers I have plenty of red peppers that I have strung up and dried, so I will just grind up some of them and use them.

The weather is just perfect for going to the beach at this end of the world right now, and I am trying to catch up on some of the surfing that I missed out on during the past semester at uni. Maybe one day Smokin' will let us know more about this bodysurfing accident? I have had my fair share of accident's out in the surf, including one time when my head hit a sandbar and I almost broke my neck. That one took a while to get over.

IF you grind your own peppers, wear masks and gloves and eye protection. The pepper dust can get into the air and it WILL find ways to get on you and you won't like the results.

Head to Pizza Hut (I know they're still in OZ) and grab some, unless they charge for them. Maybe you can trade them some great Q for some pizza flakes

And NO, we're also not going to talk about the surfing accident.
