Hi again guys, sorry for so many questions, searched and couldnt find much help so I've got to ask about the temp fluctuations in the SM50 model. Still on my first smoke, almost done, doing a pork butt. It's at about 175, going to pull it at 195......anyways, the temp is set at 200, and what I've been seeing on the ET-73 thermometer is the smoker temp will drop to 180-185 somewhere in there, then rise back up to 235ish, then drop back down again, up and down at this same temp variance. It's about +5*C here right now, so just wondering if this is a normal occurance or what? The butt has been in for about 12 hours, and its at about 173, so I'm assuming this is pretty normal temp for the butt anyways, its about 6.5lbs and boneless, which I was told will take longer than with the bone in.

Totally normal, Uzz, no worries. The wide swings are apparently part of the thermostat used. To set your mind at ease, chart temps every 15 minutes for a two-hour period, and you'll see the average comes out right (matter of fact, tell your wife that Tony at Cookshack told you to do that, and you'll get to sit and smoke a cigar and drink bourbon while you do your "official log").
