I was curious because holding temps of 140 is pretty standard for holding food to be served. But setting at 140 and being at 195+ will continue cooking the meat.

What fan and pellet are you running? Did you heat it up before turnning it down or set it there from the start?
Thanks for all the replies! I have tried about every diferent pellet out there, traegers,cookshack traegers, cooking pellets and bbq delight with same results. I spoke with Bill yesterday and explained that even if let it heat then turn down, or start off slow, will never hit below 195 or so. Also if set at 225 it seemed to run 235-245. the new fan helped in settling out some of the temps, but even when its running 30 deg hotter its still adding pellets to the pot. Bill is sending out a new auger that has a rod in it, CS customer service is tops!
