Seems like a potential hazard. If you put cold food in and leave the smoker off while waiting for it to turn off, it may spoil. If you turn the smoker off and leave food in it, it'll cool down and your food may spoil. You should try to keep temperature above 140F or below 40F at all times.

The commercial CS's have a timer that turns them down to 140F, not off. No easy way to duplicate this with the smokette, except maybe a second thermostat.
