Looking for some insight. We have smoked a few small hogs in our 750, but have been asked to do an event for 250 construction workers. We're figuring we would need a 300-350lb hog. Has anyone ever done one this large in a FEC? If so do you have any suggestions for us? It may be something we have to turn down but I would like to try and make it happen. Our thought was to get 2 racks fairly even on the bottom and bridge the two racks to make a large deck to rest the hog on. Its a thought just not sure how feasible. Any suggestions would be appreciated.

Well,

CS has put some racks in the 300 that Stuart uses, and each year for the BBQ class he does a small hog. Basically he takes out all the racks and has some inserts welded so the new rack can fit front to back and hold the hog.

Don't know if that's the option, (requires a lot of work) but wanted to put that in there for anyone thinking about it for the future.

We cooked our hog at Qlossal 2 years ago in a 500 by that method you just described. We had to have the rotis disabled, so it wouldn't start rotating...
