Hold off on your meat purchases for a while and buy yourself a sealer. You can keep items in the freezer much longer without freezer burn.

I held off buying a sealer for years then finally bit the bullet and bought one...it is worth the money and meat keeps nicely for a long time.

Last use was to cure an eye round roast to make corned beef (just sealed not vacuum sealed)which I then smoked to make pastrami. When the pastrami cooled after coming out of the smoker, I vacuum sealed it before putting it in the fridge.

Should be ready to slice, reheat, and eat tonight.
S&H - while you're waiting for a vacuum sealer, get yourself an 18" roll of plastic wrap from a club store. Remove the meat from the store package, unless it's in Cry-O-Vac. The trick is to use ample plastic to tightly wrap the meat and remove all air pockets...the source of freezer burn.

I'm with the others...get a vacuum sealer. It does the best job.

The Foodsaver I purchased from BJ's cost about $125. The bags or rolls are available in 8" and 11" widths. For standard home use, it's done a fine job. Bags/rolls aren't cheap but some hunting around on the internet will save you $$$

You can take advantage of Foodsaver specials and coupons for great savings on bags. I just purchased 16 ft. 11" wide rolls of bags and wound up paying less than 1/3 the normal price.

When these specials hit, I take advantage. Mrs. Pags just advised me not to buy any more bags, cause we've now got 23 rolls sitting in the cabinet. Needless to say, we won't have freezer burn for quite awhile.

The sealer really pays for itself and then some by letting us take advantage of sales. Just purchase more than you need, vacuum seal, freeze for future use. We do this with fresh as well as cooked foods. I mostly purchase meats, fish, poultry when I see it at half price. Then, I load up.

The sealer is also a real time saver. We always cook more than we can eat at one sitting and for next day left overs, sealing and freezing the cooked food for a future easy meal or two or three.
Ok it's done. I've ordered. I'm going with the FoodSaver V3880. Hey if it works for the Pro's around here it's d#%n sure good enough for me. It will be my luck as soon as I get it all the good sales will stop. Thanks for all the help. Like I said I do over think this so having you all help me think really saves some time.

Meat sales come and sales go...but a vacuum sealer is forever (well, a long time anyways) Smiler

S&H - After several months, what do you think of your purchase? any issues?
Vac sealers are typically the best plan for keeping air out of our purchases.
Folks can also think about keeping product in their original vac seals,if necessary.

Much of what we buy may come to the stores in vac seal and the "meat handler person"may put them out front in styrofoam and plastic wrap with price and use by date.
You can ask what the "person "has in the back cooler,still in the cases.

Brisket packers and flats,2 paks of butts/picnics,fillets,slabs of ribs,etc.

They are happy to price them and sell to you.Saves them from opening the vacpacs,etc.

Not always what you need,but often can work.
